The largest zucchini on this platter is 22 inches long and 14 inches in circumference! This visit from the “Zucchini Genie” sparked a new recipe:
3 medium zucchinis, shredded into
6 beaten eggs with 1 cup of Feta cheese, freshly ground pepper and nutmeg – to taste
Bake in the oven at 350 degrees for 40 minutes!
I served this for lunch with buttered sourdough toast, breakfast sausage and slices of home grown tomatoes. Delicious.
