At a recent work out with Olympian Lashinda Demus at a boot camp on the beach, one of her sponsors shared this recipe with us. Chobani yogurt has twice the protein of other yogurts so while this recipe is light in calories, it contains the powerful fuel required by athletes.

For mere mortals, like me, it just tastes great and keeps me from keeling over from too many laps around the track. Okay, the track is purely mythical and it’s a train track – the one for my train of thought. If you’ve watched my interview with Lashinda, I’m sure you could see that I haven’t run around a track since dinosaurs roamed the Earth. Seriously, I was at a track meet once. I was about 10. I competed in the broad jump and I was pretty good – at least until my competitors jumped. I quickly realized that my God given talents didn’t extend very far past the bleachers.

This recipe from Chobani’s Kitchen was served to us at the “Refueling Station” after our beach side boot camp. It was a personal fav because the toasted coconut took me to an island of calm, like a mini va-cay in my mouth. A big thank you to Chobani for sharing this with us! Fruit Kebabs Serves 4

1/2 C 0% Strawberry Chobani

1/2 ripe pear, cored and cubed

1 1/4 tsp fresh lemon juice

8 small strawberries, hulled

8 pineapple chunks

8 red or green grapes

1 Tbsp toasted, sweetened shredded coconut


Toss pear with lemon juice. Thread fruit onto skewers. Stir coconut into Chobani. Serve a dollop with each skewer for dipping.
