The start of a wonderful meal, garden fresh fruits and veggies. I shop at the local farmer’s market for the foods I don’t grow in my own garden.
Here are my fresh summer veggies, ready to roast. Luscious tomatoes, baby zucchinins and squashes with red, purple and gold potatoes, carrots, mushrooms and onions, drizzled with olive oil and seasoned with lemon slices and rosemary.
Have you ever tried Drunken Chicken on the grill? Fill the center with white wine. If you don’t have one of these standing roaster pans, you could substitute a can of beer in the center of a shallow pan. As the chicken cooks, the alcohol flavors and moistens the meat.
