- 1/2 cup powdered sugar
- 6 farm fresh eggs (yolks only)
- 1 can evaporated milk
- 1 tsp.pure vanilla
- 1 1/2 T Old Bushmills Irish Whiskey
Beat egg yolks and combine all ingredients in a medium sized sauce pan. Cook over medium low heat while stirring constantly.
Everything proceeds according to plan.
Ring, ring, ring
Left custard on stove (low heat).
Answered phone.”Hi Mom! Yes, I’m making my Corned Beef. Uhh-huh, it’s on the stove. What time will you be here? Uhh-huh. Uhh-huh. Oh, ha ha ha. Yes, me too. Well, let’s see. Who else will be here? . . . etc. etc.”
20 minutes later:
Honestly, this doesn’t taste bad, but the texture is awful and the idea of enjoying whiskey in my eggs is just appalling on so many levels. Command Z. Command Z.
Bushmills and pudding mix! This works, too. Requires a cup of milk or two – whatever it says on the package. I still add a little vanilla to this (maybe a cap full) to enhance the flavor. You have to be careful not to add more than a splash of whiskey or your pudding won’t set. Plan A is definitely preferred – fewer chemicals, better tasting and more satisfying to make a real custardy, rich, pudding. I top this dessert with real whipped cream (the kind you whip yourself) and fresh mint springs from my kitchen garden. Sometimes things go wrong. It happens. In fact, sometimes it’s what makes a meal memorable!
So I thought I’d share my recipe, along with a fail safe, on the off chance that something like this happens to you. Or maybe you need a quick dessert and don’t want to fuss with making something from scratch. Vanilla pudding can be used with other liquors you may have lurking in the back of your cabinet; Kahlua, Frangelico, Amaretto, St. Germain, Limoncello, a Lavender, Mint or Chocolate cordial would all work (individually – lol) to make a special little adult dessert in a pinch. Top with edible flowers for Spring. Happy St. Patrick’s Day
