Summer Breeze, Strawberry Bruschetta Recipe

This easy recipe for Strawberry Bruschetta is great for serving outdoors this summer when temperatures soar. The fresh and unexpected flavor of slightly sweetened strawberries with olive oil, mellow balsamic vinegar, salt, pepper and basil atop crusty baguette slices smeared with goat cheese, blend perfectly with white wine and sparkling water.

This is an ideal appetizer to serve poolside this summer when your girlfriends gather for a midsummer sangria. My family liked this recipe, but the strawberries were too much of a surprise and it didn’t receive the raves I anticipated. Personally, I loved it and happily ate up all the extra portions!!

8 thin baguette slices

1 cup of diced strawberries

1 Tablespoon sugar

8 fresh basil leaves, sliced into thin ribbons

salt & pepper

drizzle of olive oil

drizzle of balsamic vinegar

2 oz. of goat cheese

In a small bowl combine strawberries and sugar, set aside. Cut your baguette and slice your basil. Spread the goat cheese onto the baguette slices. Once the strawberries have had a chance to release some of their juices (10 minutes or so), give them a stir and add in the olive oil and balsamic vinegar. Add a sprinkle of salt, stir and top each bread slice with a spoonful of the strawberry mixture. Top with a grind of pepper and sprinkling of basil leaves.

Serve immediately.
