Raw Pumpkin Salad Recipe

This raw pumpkin salad recipe is refreshing and hearty, perfect for an afternoon in Autumn. I just learned that you can eat pumpkin raw! I never considered it before, but it’s just another kind of squash! Enjoy!

Toss to combine:

3-5 cups Arugula

2 diced celery stalks

1 raw, peeled and grated beet

1/2 cup raw, grated pumpkin

1/4 cup fresh pomegranate seeds

3 diced green onions

1/2 cup Feta cheese

1/4 cup chopped cilantro

Drizzle with 2-3 Tablespoons Extra Virgin Olive Oil. Toss again. Sprinkle with 1-2 Tablespoons Red Wine Vinegar, freshly ground black pepper and coarse sea salt to taste. Toss once more and serve. Makes enough for 4 servings.
